Spicy Tuna Roll with Goana Tuna Bites

  • 1 cup Sushi Rice, cooked and seasoned with 2 tbsp Sushi Vinegar
  • 4 oz sriracha tuna bites, thinly sliced
  • Tuna Flakes, for the outside
  • 1 Mango, peeled and cut into thin strips
  • 1 Avocado, peeled and cut into thin strips
  1. Cook and Season the Rice: Cook the sushi rice according to the package instructions. Once cooked, transfer to a large bowl to cool slightly. Gently fold in sushi vinegar without mashing the grains. Let it cool to room temperature.
  2. Prepare the Ingredients: While the rice is cooling, prepare your fillings. Thinly slice the sriracha tuna bites. Cut the mango and avocado into long, thin strips.
  3. Assemble the Sushi Rolls: Place a piece of plastic wrap on a sushi rolling mat. With wet hands, spread a layer of seasoned sushi rice about 1/4 inch thick on the plastic wrap, forming a rectangle. Arrange a layer of sriracha tuna bites, mango strips, and avocado strips along one edge of the rice.
  4. Roll the Sushi: Using the mat and plastic wrap as a guide, carefully roll the sushi tightly, starting from the edge with the fillings. Make sure the rice encases the fillings completely. Once rolled, gently shape the roll with the mat to ensure a firm, round sushi roll.
  5. Coat with Tuna Flakes: Carefully unwrap the sushi roll from the plastic wrap. Roll the sushi in tuna flakes, pressing gently so they adhere to the rice for an outer coating.
  6. Cut and Serve: With a sharp, wet knife, slice the sushi roll into 6-8 pieces, cleaning the knife between cuts to ensure smooth slices. Arrange the sushi rolls on a plate and serve immediately.
