Ahi Tuna Salad: Greens and Peach with Tuna Bites

Ingredients:

  • 2 tbsps Extra Virgin Olive Oil
  • Juice of ½ Lemon
  • Sea Salt & Black Pepper (to taste)
  • 3 cups Arugula
  • 2 Peaches (medium, pit removed and sliced)
  • 2 ozs Garlic-Herb Tuna Jerky
  • 1/4 cup Feta Cheese (crumbled)
  • 2 tbsps Pine Nuts

Instructions:

  1. Whisk the Dressing: In a small bowl, whisk together the extra virgin olive oil, lemon juice, sea salt, and black pepper. Set aside.
  2. Combine Base Ingredients: In a large mixing bowl, combine the arugula, sliced peaches, and crumbled feta cheese.
  3. Prep the Protein: Break the tuna jerky into bite-sized pieces and add it to the salad mixture.
  4. Dress the Salad: Give the dressing a final whisk, then pour it over the salad.
  5. Toss Gently: Toss the salad gently until all ingredients are evenly coated with the dressing.
  6. Toast Pine Nuts: Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes, or until lightly golden and fragrant. Keep an eye on them as they can burn quickly.
  7. Garnish: Sprinkle the toasted pine nuts over the salad just before serving.
  8. Serve: Divide the salad between two plates and serve immediately.
