Ahi Tuna Salad: Greens and Peach with Tuna Bites
Servings: 2
Ingredients:
- 2 tbsps Extra Virgin Olive Oil
- Juice of ½ Lemon
- Sea Salt & Black Pepper (to taste)
- 3 cups Arugula
- 2 Peaches (medium, pit removed and sliced)
- 2 ozs garlic herb tuna bites
- 1/4 cup Feta Cheese (crumbled)
- 2 tbsps Pine Nuts
Instructions:
- Prep the Dressing: In a small bowl, whisk together the extra virgin olive oil, lemon juice, sea salt, and black pepper to make the dressing. Set aside.
- Combine Veggies: In a large mixing bowl, combine the arugula, sliced peaches, and crumbled feta cheese.
- Add Tuna Bites: Cut the tuna bites smaller to your liking if you need and add it to the salad mixture.
- Add Dressing: Give the dressing a final whisk, then pour it over the salad.
- Toss: the salad gently until all ingredients are evenly coated with the dressing.
- Toast the Pine Nuts: in a dry skillet over medium heat for 2-3 minutes, or until lightly golden and fragrant. Keep an eye on them as they can burn quickly.
- Sprinkle: the toasted pine nuts over the salad just before serving.
- Serve: Divide the salad between two plates and serve immediately.
