Greens and Peach Salad with Goana Tuna Bites

Servings: 2

  • 2 tbsps Extra Virgin Olive Oil
  • Juice of ½ Lemon
  • Sea Salt & Black Pepper (to taste)
  • 3 cups Arugula
  • 2 Peaches (medium, pit removed and sliced)
  • 2 ozs garlic herb tuna bites
  • 1/4 cup Feta Cheese (crumbled)
  • 2 tbsps Pine Nuts


  1. Prep the Dressing: In a small bowl, whisk together the extra virgin olive oil, lemon juice, sea salt, and black pepper to make the dressing. Set aside.
  2. Combine Veggies: In a large mixing bowl, combine the arugula, sliced peaches, and crumbled feta cheese.
  3. Add Tuna Bites: Cut the tuna bites smaller to your liking if you need and add it to the salad mixture.
  4. Add Dressing: Give the dressing a final whisk, then pour it over the salad.
  5. Toss: the salad gently until all ingredients are evenly coated with the dressing.
  6. Toast the Pine Nuts: in a dry skillet over medium heat for 2-3 minutes, or until lightly golden and fragrant. Keep an eye on them as they can burn quickly.
  7. Sprinkle: the toasted pine nuts over the salad just before serving.
  8. Serve: Divide the salad between two plates and serve immediately.
