Seafood Appetizers: Stuffed Mini Peppers with Tuna Bites

Ingredients:
- 8 Mini Bell Peppers, halved and seeded
- 4 oz Cream Cheese, softened
- 2 oz ginger honey tuna bites, finely chopped
- 2 tablespoon Dried Cranberries, chopped
- 1 tablespoon Fresh Parsley, finely chopped
- 1 teaspoon Fresh Chives, finely chopped
- Salt and Pepper, to taste
- Preheat the Oven: to 350°F (175°C). Arrange the halved mini bell peppers on a baking sheet.
- Mix Ingredients: in a mixing bowl, combine the softened cream cheese, finely chopped tuna bites, chopped dried cranberries, parsley, and chives. Season with salt and pepper to taste. Mix thoroughly until all the ingredients are well incorporated.
- Add Stuffing: using a small spoosbn or a piping bag, fill each mini bell pepper half with the cream cheese mixture. Be generous with the filling, but ensure it's neatly contained within the peppers.
- Bake: Place the stuffed mini peppers in the preheated oven and bake for about 10-15 minutes, or until the peppers are slightly softened and the filling is warmed through.
- Cool: Once done, remove the peppers from the oven and let them cool for a couple of minutes.
- Serve: the stuffed mini peppers on a platter, garnished with additional chopped herbs if desired. These can be enjoyed warm or at room temperature, making them perfect for your party needs.
