Breakfast Tacos with Goana Tuna Bites

Servings: 2
Ingredients:

  • 1 teaspoons Butter
  • 6 Eggs (whisked)
  • 2 teaspoons Everything Bagel Seasoning (plus more for garnish)
  • 4 Corn Tortillas (small, warmed)
  • 1/2 cup Feta Cheese (crumbled)
  • 1/2 Avocado (medium, sliced)
  • 2 stalks Green Onion (chopped)
  • 2 teaspoons Hot Sauce
  • 1 oz sriracha tuna bites

Instructions:

  1. Heat a Skillet: over medium heat and melt the butter in it.
  2. Add Eggs: Once the butter is melted, add the whisked eggs to the skillet.
  3. Season: Sprinkle the everything bagel seasoning over the eggs and scramble them until they're cooked to your desired consistency.
  4. Warm Tortillas: While the eggs are cooking, warm the corn tortillas either on the skillet or in the microwave.
  5. Divide: Once the eggs are cooked, divide them evenly among the warmed tortillas.
  6. Add Toppings: Top each taco with crumbled feta cheese, sliced avocado, chopped green onion, hot sauce, and torn pieces of tuna bites.
  7. Garnish: the tacos with additional everything bagel seasoning if desired.
  8. Serve: immediately and enjoy your breakfast tacos with tuna bites!
