Black Bean and Tuna Bites Dip

Ingredients:

  • 3/4 cup black beans, cooked and drained (canned is fine, just rinse well)
  • 1/4 cup tuna bites, finely chopped
  • 2 tablespoons red onion, finely diced
  • 1/2 jalapeño, seeded and finely chopped (adjust to taste)
  • 1 tablespoon cilantro, chopped
  • Juice of 1/2 lime
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional garnishes: diced avocado, chopped tomatoes, shredded cheese, a dollop of sour cream

Instructions:

  1. Prep the Beans: In a bowl, mash the black beans with a fork or potato masher until they're mostly broken down but still have some texture.
  2. Mix Ingredients: Add the finely chopped tuna bites, diced red onion, chopped jalapeño, and cilantro to the mashed beans. Stir to combine.
  3. Season: Add the lime juice, ground cumin, a generous pinch of salt, and pepper. Drizzle with olive oil and mix well. Taste and adjust seasoning as needed.
  4. Chill: For the best flavor, cover and refrigerate the dip for at least 30 minutes to allow the flavors to meld together.
  5. Serve: Serve the dip in a small bowl, garnished with optional toppings like diced avocado, chopped tomatoes, shredded cheese, or a dollop of sour cream. Pair with your favorite keto friendly chips or vegetable sticks like cucumber, bell pepper strips, or celery for dipping.
